You can us ES File Explorer to back up apps or there are many solutions for backing up apps; however the issue is that you cannot back up your data unless you've rooted your tablet and use something like Titanium Backup.
Also the apps which are preloaded mostly are free or trial versions that can be downloaded from the Google Play app store at no cost. I
