I just updated my K1 to K1_A301_11_11_111116_GE (Android 3.2.1). My first impression is that it is stable and runs much smoother than the previous version.
I configured my WLAN AP to use channel 13, as it is free for use in most parts of Europe. I never had any issues with that channel so far. However, after the update, my K1 was unable to find my AP. After I switched it to channel 1, everything was fine again.
Is there a way to enable channels 12 and 13 on the K1 again? I have searched in the WLAN settings and extended settings, but haven't found a way to enable them.

Settings like these are usually determined based on the installed OS, or in some cases features either are or are not present depending on where the product is registered. Europe gets 3 more wireless channels than the US (lucky bums!).
I don't have a way to specify which channels my wireless adapter can use in the xxxUS release.
I'll bet what you're seeing is a bug.

It's a _GE firmware, so the additional channels should be enabled.
Yes, it seems to be a bug. Is there a way to report it to Lenovo?

The update may have removed them by mistake.
A tip though, if your around a lot of wireless networks, i.e apartments, use a wifi scanner to see the most used channel, most use 9-11 by default. Best performance and stability is to use a channel 2-3 lower than theirs for less interference.
I did that at the past apartments, I used channel 1 or 6 when everyone else used 9-11
