I'm surprised nobody's mentioned Overdrive yet. If you use your tablet to read books, Overdrive will let you check out electronic books from your local library. As a resident of Massachusetts, I was able to sign up for an electronic library card with the Boston Public Library without having to go to Boston to do it:

The app is free and the books are free... what could be better?

xScope Browser is the best browser I've found.
Elder Sign: Omens is an excellent, official Android version of an actual board game by FFG. It's my favorite tablet-based game by far.

Dead Space by EA.
By far the best mobile game on the market. Beat it twice now, and enjoyed it each time through.
It made me drop my tablet once or twice...trust me when I say that the game is awesome. It's controls are intuitive and the gameplay is incredibly immersive.
GET IT.

BS Player lite w ARMv7+VFP support (w SW acceleration it plays most videos smoothly)
Unit Converter (converts temperature, lengths, etc. & converts currencies)
News & Weather (able to add news topics such as Computers, Android, Tablets, Lenovo, etc.)
TuneIn Radio (many stations available including local radio stations for many cities, fire, police, etc.)
HBOGo/MaxGo (if you subscribe to these channels much video available)
Crackle (many free videos & full TV episodes)
TV.com (many free full TV episodes)
Dolphin Browser Mini (seems to play online videos that even Dolphin HD won't play)

Group SMS Free is a great app for sending TXT messages using your Google Voice account. I set up groups online in my Gmail account, and can select to send personalized mass texts to groups in my contacts.
