To edit /etc/modprobe.d/alsa.conf you need to use sudo.
sudo gedit /etc/modprobe.d/alsa.conf

Which Ubuntu version are you using?
If you are using Lucid Linux (10.04), you should download alsa 1.0.23 from alsa site. Today the lastest version is 1.0.24: http://www.alsa-project.org/main/index.php/Main_Pa
If you are using Ubuntu maverick, it came with alsa 1.0.23, and you does not upgrade.
After upgrade your alsa (or not to who have >= 1.0.23) edit the alsa.conf.
sudo gedit /etc/modprobe.d/alsa.conf
and add the two follow lines:
options snd-hda-intel model=thinkpad
options snd-hda-intel probe_mask=0xffff,0xfff2
The first line solves the problems with your headphone jack, and the second solves the sound problem througth HDMI.
