I want to replace the 5400rpm hard drive in my t60 (2623-d6u) with an Intel 520 Series Cherryville SSDSC2CW180A3K5 2.5" 180GB SATA III MLC Internal Solid State Drive (SSD). Will the ssd work on t60? I see the ssd has sata3 while the t60 has sata1.

It will work just fine, albeit at SATA I transfer speeds. Nothing you can do about that, but it's a worthwhile upgrade nonetheless IMO.

Even with sata1 speeds an ssd can be the best upgrade for a T60 class machine. It's most restrictive issue in regards to performance is the limit of 3gb of ram, so if your programs consume all 3 gb of ram it will be forced to use virtual memory where it uses harddrive space for memory, which is very slow. With an SSD the virtual memory will be much faster.
As for your choice of harddrives, Intel definitely makes the best ssd, but I wouldn't pay extra to get sata 3 support when you can't use it, so factor that into your decision on which drive to purchase.
