We're thinking about purchasing some E30s and had a couple question about upgrading RAM.
If I initially purchase an E30 with one non-ECC UDIMM, is it possible later to:
1) Upgrade with additional UDIMMs myself? (I ask because Dell sometimes does not include the unfilled RAM slots on the motherboard).
2) Switch to ECC RAM?

welcome to the forum!
yes on #1. all E30 systems ship with the full amount of slots.
#2 requires you purchase a xeon processor to use ECC memory. it looks like the configurator currently allows one to purchase an i3-2120 with ECC memory and that CPU doesn't support it. the site will need to be flagged for correction.

Thanks Erik. So just to be sure, as long as we purchase an E30 with a Xeon, we can later switch from non-ECC to ECC memory?

absolutely. all of the xeon processors offered with the E30 support ECC memory.
here's a link to intel's site showing all of the E3 xeon flavors and specs for each.
