I have heard that Google Voice will allow you, but don't have first hand knowledge. The only other way that I know of it to use an external recorder with the phone in speaker mode. This will be the most reliable way.
Be careful that you know the laws in your state so that you aren't breaking the law. It is not legal to record calls in all states. Hope this helps.

To expand on what joelbon said, Google Voice will allow you to record phone calls in the same way Verizon, AT&T, T-mobile, Sprint, etc. will allow you to record them. And that's a one-way conversation a.k.a. a message someone has left for you. It does NOT allow you to record in real-time, such as a two-way conversation, which I think is what JP_Savage is asking.
