I am the owner of a Lenovo laptop having the following specifications:
Product Code: 80T30127RI
Motherboard: LNVNB161216 (U3E1)
Processor: Intel Core i7-7500 u
RAM Memory: 8 GB DDRAM 4 2133 Mhz
Storage: WDC WD10JPCX-24UE4T0 1TB
SATA Type: SATA-III 6.0Gb/s
I want to know what is the maximum RAM capacity that I can instal on my laptop.

Please find attached a print screen of my RAM specifications/status. In order to find out this info I have used the Speccy software.
It says that my laptop motherboard has the following specifications:
- Total memory slots 2
- Used memory slots 1
- Free memory slots 1
What I want to do is to purchase 1x8GB DDRAM 4 2133 Mhz and to install it on my laptop because form the above I have understood that I have 1 memory slot free.
Is my understanding correct?

Software tools can be useful but not really accurate as it would read off from the chipset and processor features and not what is physically built on the machine.
Referencing the hardware manual page 44 shows there is 1 slot for upgrade. This single slot most likely is occupied by your 4GB Samsung RAM (part number 01AG707). Your motherboard have a soldered 4GB on it (part number 5B20N020001 MB Q 80T3 NOK I77500U R17M 4G OL NULT ). I got this from the parts lookup page using MTM 80T30127RI here makes a total of 8GB ram in your laptop.
If you can physically verify it now, it would show similar to the image below:
