I upgraded to Android 8 I guess about a week ago (give or take) and my battery has been draining at an alarming rate since then. Is there a way for me to revert back to the previous / stock / OEM version of the OS?

Downgrading the operating system is never an option, but I don't think it would help anyway. It's the easiest way to hard brick your device and is not supported by Moto.
Can you please put the phone into safe mode and run it that way for at least several hours to see if the rate of drain is reduced? You will not have access to your third party apps, but you will have access to calls, texts, Chrome, and any other app that came with the phone out of the box.

I got the same problem since I upgrade my phone on June 21st.
I think I found the problem.
Yesterday I installed the "CPU-Z" App in my Moto Z Droid Force . In the battery category it showed that the phone only got 2600mAh, but before the Oreo update it showed the complete 3500 mAh. Maybe the new software was the same for Moto Z and all the variants

As I posted in another thread, this has been a recurring problem with several users of moto z line devices, both moto z, moto z force, moto z2 play, and others. My current situation is: I try to turn on the device, and it points low battery. If I wait a while and try to call, the boot process starts, and hangs up. But if I connect the charger (turbo power) shows + - 40% battery. I am tempted to exhaust the battery to do the factory reset procedure, and try this "fake" battery recalibration process, just to be sure, and be able to request a replacement of the device along with technical assistance and support. THIS IS INADMISSIBLE! My device does not have 1 year of use yet! I am posting here, to follow up, since the other thread was marked as "solved", without actually having solved the problem.

There is some tips that could save the battery life for your reference:
1) Use Low Power Mode
2) Restrict Unimportant Notifications
3) Turn off Wi-fi if You Don't Need It
4) Do not Activate Location Service
5) Lower Screen Brightness
6) Limit Background Refresh for Applications
7) Tighten Up Auto-Lock the shortest period for your device, namely 30 seconds.
