I have the Moto Z3 Play, and if you open a text from that person, click on the three menu lines in the upper right corner, choose people and options, there is a color palette symbol adjacent to the person's name and number. Can't seem to find a way to default everyone to the same color automatically, though.

Thanks for posting. I checked my Messages app settings, I'm not seeing any options to set the background color to a default color for everyone. It looks like we can only set it one by one for your contacts.

I am having this same issue. When I first recieved my phone, I was able to change it for one person but it changed all my color text bubbles on all messages. I am using the Message app that was installed on my phone when I recieved it. I do not use Message+.
After changing the color on one person my phone did an update and the People & Options is no longer in the menu.
According to the System Updates I am on Android 8.1.0

I remember I have seen that back a few months ago, but it looks like that option is no longer available. I have checked the phones I have here, running a different OS but I can't find any ways to set the color for that specific contact. Looks like this is designed on the recent update of the Messages app. I'll try to have my team check this as well. Thanks.

Well now that I changed one they all changed to that same color. I am okay with changing them all but how? Or am I stuck with this color forevermore?
