If it were mine, I would install a single 8GB dim. 1600mHz is fine. I tend to use whatever memory is cheapest, but I have seen reports of some people having problems with Corsair Value Select. On my machine, (T430s) I use 2 X 8GB Corsair Vengeance 1600 MHz.
