I have a T580 with intel UHD 620 driver and 40AJ docking station. To that I have 2 screens, Samsung LU28E85KRS.
I just want to use the 2 external screens with 3840x2160 resolution, but i can only get that och one screen, the second one just get 1920x1080.
I´ve updated softeware in docking station, intel driver but no differens.
As far as I can se in the specs, both dock and computer should be able to put out that resolution on both screens.
I´ve tried both Displayport and HDMI on the second screen.
My old W540 had no problem with that resolution.

take a look at this supported video output options for the 40AJ. You should be able to use both displays at 4k@30Hz.
I guess if you configure one display to 4k@60Hz then FullHD is the only option available for the 2nd display.

Then I should get the thunderbolt 3 (40AN)docking station instead.
I'm not so sure about this. AFAIK it's a combination of system + dock and the T580 just isn't able to support two 4k displays at 60Hz.
Take a look at the possible output resolutions for 40AN docks (Thinkpad Thunderbolt 3 Gen 2).
Two displays 4K@60Hz are only supported by X1 Carbon and X1 Yoga systems. Other systems get only 4K@30Hz like the pro and ultra docks.
ignore the Thundebolt Workstation docks, these are for the P* series (former W*).
