What is the best SSD to use in the Ultrabay caddy in a Thinkpad T420?

Welcome to the forum!
Any standard 2.5" 7mm or 9.5mm SSD should work. I'd stick with name brands like Crucial, Samsung or Intel and look for the lowest cost at highest capacity. Considering that the T420 is now several years old I doubt that going with the SSD that has the "fastest" specs is going to make any difference in practice.
BTW the Ultrabay runs at SATA-III (6Gb/s) speeds so it shouldn't be a bottleneck compared to the internal drive bay.

I am looking to put in a SSD in the Ultrabay. I have a Thinkpad T420 and wondered if this would be a good one Crucial BX200 240GB SATA 2.5 Inch Internal Solid State Drive - CT240BX200SSD1 or Samsung 850 EVO? Will either one work?
