I read that I need adapter but I dont know which one and will a achive full speed 2100/3500MB/s with this adapter?

The T470p has a PCIe 4x interface limited to only two lanes. As such the maximum speed you can see is 1800MB/s.
As such don't go buying the most expensive PCIe SSD. I have the 960 Evo 500GB which is rated at 3200MB/s read and 1800MB/s write I get around 1800MB/s for both.
Actually, in real life I have not felt any difference between it and the Samsung 851 SATA SSD I had installed before. As such I would advise against spending so much money towards a PCIe SSD + the caddy (only $30) and get a larger SATA SSD.

You can't have two NVMe drives there, as a single takes up all the bandwidth available to the Sata Express port that the bracket is connected to. You can find after market brackets that will take 2 SATA m.2 drives for separate boot. Not NVMe.
It works the same way as if you had a SATA SSD in the wann slot and a SATA drive in the 2.5 bay.
