Which was the latest notebook manufactured under the IBM brand? Was it R61e ??? I searched a bit, but I did not find exact information.

This chart is the best I could come up with, but I've asked some of my friends who are Think collectors to stop by with more info if they have a chance to reply here.
I am not employed by Lenovo or Microsoft. I am a volunteer.

Lenovo started rebranding ThinkPad in 2007, the ThinkPad T61/T61p were two models I can think off that had the IBM logo replaced by the ThinkPad logo over their lifetime. All Lenovo did was put their branding on the parts. Then they started to rename ThinkPads.
Given this, it's most likely the first Lenovo made machines (including research and development), started to appear around 2007 to 2008. You need to account 1 to 2 years for research and development, that is, following a tick-tock trend as the same chassis was kept for 2 generations. And I believe this is still the case today.

Is difficult to make a clean cut, since as mentioned above there was a transition period between the T43(p)/T60 &or X41/X60 generations.
The logo itself doesn't mean anything, if I remember correctly there were T43p batches still with the IBM logo but produced by Lenovo.
