not possible to upgrade to Dual-band wireless if you buy single band?

Is it not possible to upgrade to dual-band AC wireless because of the BIOS limitations?

 

If I buy a Thinkpad X240 with single band wireless, am I stuck with that forever, unless Lenovo itself starts selling the dual-band card?

Why don't you order x240 with the wlan card you need?

If you'll decide to add it later purchase the card yourself:
FRU 04X6007 - Intel Wilkins Peak 2 7260 2*2 11ac+BT4.0 M.2 Card.

Note the card should be WITH Lenovo p/n (FRU) you're seeing above.
