I'm leaning more towards the recovery discs but I am also open to trying the Linux Live CD. How much memory will it take to successfully download it on a USB stick?
It doesn't take an overly large USB stick. 2gb is probably big enough, 4gb for sure. I'll have to dig up the sites to read up.
Please bear with me, but again, there are no garantees that this will do anything beyond showing that the drive is unrecoverable.

In case the old hard drive doesn't work, how can I reformat a new one to original factory settings?
with a set of factory restore disks that Lenovo Service may be able to provide, and a borrowed external optical drive.

what OS did yours come with? what OS is indicated on the COA sticker on the bottom? please don't post the key.

It looks like there is no recovery disc for the Lenovo Tablet ThinkPad X61.
Service can't supply/sell them to you?
