More than likely, the setting "OS Optimized Defaults" is set to "Enabled".  This setting is set by default from manufacturing anytime you order a system with Windows 10.  This setting essentially puts the system into what we call pure UEFI mode (all option roms set to UEFI, Secure Boot gets turned on, etc).

To change this setting, go into BIOS F1 setup -> Select "Setup" from the bottom left of the screen -> Select "Exit" menu from the left hand side of the screen -> set the option for "OS Optimized Defaults" to "Disabled" -> Press F10 to Save and Exit. This will put your system back into Legacy mode.

This helped me too

Once you switch "OS Optimized Defaults" to "Disabled", you'll need to do an F10 Save and Exit BIOS setup. Once the system reboots, you should be able to go back into BIOS F1 setup -> "Startup" menu tab and change the boot mode.

Hello, I have a Flex 5, but I have the same issue. In the InsydeH2O BIOS utility, the boot mode is grayed out and fixed to UEFI. This, in spite of I changing the OS Optimised Defaults option to Disabled. Will appreciate any help on the same. Thanks, Kunal

This Forum group is specifically for "ThinkStation Workstations".  I'm not sure any of us that moderate this specific Forum space has the expertise to debug another system that's not "ThinkStation" related.
