Thanks for posting. In terms of specification, there is no difference between the models. They only differ in the carrier compatibility.
XT2005-1 - Verizon
XT2005-3 - TMO/MetroPCS
XT2005-4 - Sprint/Boost
XT2005-5 - Retail/USC/Consumer Cellular/Republic Wireless
XT2005DL - Tracfone
Let me know if you have further questions.

Will any of the E6 models have a fingerprint sensor or face unlock?
Will they have a compass or qr code reader?
Same questions above for E6 plus?

The Moto E6 does not have a fingerprint sensor, and face unlock. It does have a compass and you can download a QR scanner app from the Google Play store.
For the Moto E6 Plus, it has a fingerprint sensor, face unlock and Compass.

Could a XT2005-3 that runs on T-Mobile be converted to a XT2005-4 that runs on Sprint? Such as by unlocking the XT2005-3 from T-Mobile?

You may need to ask T-Mobile if they can unlock the model. If they manage to do so, the phone will have limited carrier compatibility and carrier-specific features.

It should have the same carrier compatibility as the unlocked version. Just to add on this, in case you had the phone sent for warranty replacement you will receive a T-Mobile locked device and may need to re-unlock it through them again.
